The producer

Domaine William Fèvre is a prestigious wine producer based in Chablis, Burgundy, France, known for producing some of the finest expressions of Chardonnay. Founded in 1959, the domaine has played a significant role in the recovery and development of the Chablis region, particularly through the efforts of its founder, William Fèvre. The Fèvre family has been involved in grape growing in Chablis for over 250 years, witnessing the region's fluctuations in fortune and contributing significantly to its revival during the 20th century.

Domaine William Fèvre's vineyards span 51 hectares and consist of 90 separate parcels, which include a remarkable array of Grand Cru and Premier Cru sites. This diversity allows the domaine to produce wines with a great complexity and richness, expressing the unique terroir of Chablis. The steep, rocky slopes along the Serein river contribute to the distinctive minerality and freshness of their wines, which are hallmarks of the Chablis style.

The wine

The William Fèvre Chablis Village 2019 has been well-received by critics. This wine is known for its very fresh bouquet, which includes notes of citrus and white-fleshed fruit, marked by the mineral notes typical of the Chablis appellation. It is recommended for pairing with fish dishes, grilled or in a light sauce, various seafood, oysters, and sushi, showcasing its versatility and ability to complement a range of culinary flavours.

With characteristic brightness, juiciness, and subtle zestiness, which are balanced by its mineral-driven freshness. This Chablis stands out for its ability to capture the essence of the Chablis terroir, offering a delightful taste experience that reflects the unique climatic and geological conditions of the region.

We choose our wines based on a range of criteria (see how we choose our wines) of which critic scores is just one. Rather than simply highlight the best score to promote a wine, our average critic score is calculated from the scores provided by several respected wine critics, who we follow for specific regions. They do not represent all critic scores and, wherever possible, we try and give more weight to more recent reviews. Where appropriate we consider market-based scores like Global Wine Score or Wine Searcher Average scores.

As a rule, we look to offer wines that achieve a 92/100 average critic score or better and frankly a lot of very good wines simply don’t make the cut. As a high-end provider we want to reflect that positioning in the quality of wines we offer. Such wines are only a tiny fraction of those generally on offer in the market. We believe that an average score is a more conservative and representative approach, but it is still subjective and only offered as a guide to our customers, who will (and should) do their own research. We will add individual critic scores to our website in the future.
