Isole e Olena

The Isole e Olena estate being situated in the western part of Chianti Classico, which is open to cooling ocean breezes, means that the wines feel more elegant and fragrant than wines from other parts of the region. Their small production of Vin Santo is no exception to this rule. Made from two thirds Malvasia and one third Trebbiano, the grapes are dried for three to five months before pressing and racking into caratelli barrels for fermentation.

Following fermentation, the wine spends another eight years of ageing in the same barrels before bottling. At Isole e Olena, it is said that “for every 100 kilos of grapes, only about 12-15 litres of Vin Santo is produced” – thus this is truly unique product.
