Capezzana

The Conti Bonacossi family took over the Capezzana estate in 1925; the same year Vin Santo was produced here for the first time. Usually made from 90% Trebbiano and 10% San Colombano, grapes for this Vin Santo are grown on various vineyards on the 104 ha estate, but all within the Carmignano denomination, which is located about 20 km west of Florence.

Once harvested, grapes are dried on cane mats in well-ventilated rooms until February. The grape must is then fermented very slowly in small chestnut/cherry casks for a minimum of four years, and following which the wine ages for another five years in caratelli barrels.
