Avignonesi

The Occhio di Pernice Vin Santo from Avignonesi is made entirely from the black Sangiovese grape, which gives the pink colour to the style. Grapes are hand-picked from best vineyard parcels and then laid out on straw mats, in a special drying room, for several months. The slow natural fermentation takes place in 50 litre caratelli casks, and is followed by around ten years ageing. During the very long ageing process, around half of the liquid evaporates.

At Avignonesi, it is said that with the same amount of grapes used to produce one of the 375ml Vin Santo, you can produce twenty-four 750 ml bottles of wine. The 2001 vintage received a 100 point score from the Wine Advocate. Wine Spectator scored 2001 and 1999 98 points and 2002 and 2000 96 points.
